Beer Making Yeast

Yeast are the single-celled microorganisms that are responsible for transforming sugar into alcohol. There are hundreds of different types of yeast, with each having a different effect on the brewing process. For brewing purposes, most yeast are categorized as either an ale yeast or a lager yeast.

Beer making yeast for ales are considered top-fermenting yeast. They are called “top-fermenting” because they rise to the top during the fermentation process. This type of yeast is generally used for producing quality ales, porters and stouts.

Beer making yeast for lagers are called bottom-fermenters. They tend to fall to the bottom during fermentation and therefore cause less of a foam head at the top. They are most often used for creating pilsners and other “lighter” beers.
